This High-Protein Chicken, Beans & Roasted Vegetable Power Bowl is a filling, fiber-rich meal built with chicken, beans, roasted vegetables, leafy greens, avocado, pumpkin seeds, and olive oil. It is the kind of simple meal I recommend when you want plenty of protein and plants without turning healthy eating into another complicated project.

This is also what I mean when I tell clients to stop thinking only about eating less.

Look at the size of this bowl. Chicken anchors the protein. Beans contribute fiber, carbohydrates, minerals, and additional plant protein. Roasted vegetables and greens add volume, nutrients, color, and even more fiber. Avocado, pumpkin seeds, and extra-virgin olive oil bring healthy fats, texture, and flavor.

It is a substantial meal. That is the point.

A meal designed to support weight management, steady energy, and better nutrition does not need to look like punishment on a plate. Building meals around protein, fiber-rich plants, quality carbohydrates, and healthy fats can make them more satisfying while giving your body the nutrients it needs.

And this high-protein chicken power bowl is easier to prepare than it looks. Cook extra chicken, prepare a larger batch of beans, roast or steam several vegetables at once, and keep greens ready in the refrigerator. Then mix and match the components throughout the week instead of making lunch from scratch every day.

Because the healthiest lunch in the world does very little for you if it is still sitting in a recipe app when hunger, meetings, and decision fatigue show up.

Equipment

  • Air fryer or stovetop or oven or grill or crockpot (to cook chicken)
  • Steamer or stainless steel collapsible basket (to steam vegetables)

Ingredients

  • 1 1/2 lb chicken breast or tenderloins
  • 1 1/2 cups cooked (or canned) beans
  • 2 zucchini, chopped
  • 2 bell peppers, chopped
  • 1 large red onion, chopped
  • 2 cups broccoli florets
  • 4 cups arugula, spinach, or mixed greens
  • 1 avocado OR four 2-oz simple smashed-avocado portions (I buy mine at Costco)
  • 1/4 cup pumpkin seeds
  • Microgreens or fresh parsley for finishing
  • Smoked paprika, garlic, oregano, black pepper, lemon, Dijon mustard, salt to taste
  • 2 tablespoons extra-virgin olive oil for cooking/dressing, adjusted to preference

Easy preparation

  1. Chicken: air fry, grill, bake, or cook on the stovetop. Make more than you need so the protein is already handled for other meals.
  2. Beans: cook a larger batch in a crockpot or pressure cooker. Refrigerate what you will use this week and freeze the rest in meal-size portions. Plain canned beans are also a good shortcut. Rinse and use.
  3. Broccoli and vegetables: steam, roast, broil, or air fry. Frozen vegetables count too. The goal is getting plants onto the plate, not winning a cooking competition.
  4. Greens: keep fresh for bowls, then saute them when they start getting tired. Spinach can also go into smoothies, eggs, soups, or warm dishes.
  5. Avocado: use fresh when convenient. If you are tired of watching expensive avocados go from “not ready” to “you missed your window” overnight, use individually portioned smashed avocado with a short ingredient list.
  6. Assembly: store chicken, beans, and vegetables separately. Mix and match through the week rather than forcing yourself to eat the identical bowl four days in a row.
BIG-CONTAINER GREENS RULE
Do not be afraid of the large container of spinach, arugula, or mixed greens. If the giant box of spinach starts looking like a bad financial decision, cook it. A mountain of greens turns into a very manageable amount in a few minutes. Use greens fresh, sauteed, in smoothies when appropriate, or stirred into soups and warm meals.

 

AVOCADO SHORTCUT
Fresh avocado is wonderful, but simple pre-portioned smashed avocado can reduce waste and make portions easier. Maria often uses the 2-oz Costco-style portions when the ingredient list is essentially avocado with minimal seasoning. Check ingredients before buying.
