Chocolate Egg-White Cream with Wild Blueberry Topping

I created this Chocolate Egg-White Cream with Wild Blueberry Topping to turn a simple pancake into a more complete sweet breakfast.

I used it over my Sweet Potato Protein Pancake, which works great as a base for either a sweet or savory breakfast.

Because let’s be honest: sweet breakfasts can be delicious, but many of them are mostly carbs with very little protein or fiber. That may taste good in the moment, but it often does not keep you full for long.

This topping is different.

The egg-white cream adds protein. The wild blueberry topping adds fiber, color, flavor, and that warm “jammy” texture without needing syrup. The FiberMend, chia, and flax help thicken the berries while increasing the fiber content.

A sweet breakfast does not have to mean unstable energy, cravings, or hunger an hour later.

Do I have to use cacao?
No. Cacao is optional. You can keep the egg-white cream vanilla-cinnamon, mix cacao into the cream, sprinkle cacao on top of the blueberries, or stir a small amount into the blueberry topping.

Can I make this ahead?
The blueberry topping can be made ahead. The egg-white cream is best made fresh because egg whites can firm up as they sit.

Ingredients

Chocolate Egg-White Cream

  • 1 cup liquid egg whites 
  • 2 tbsp water, plus more if needed 
  • 1 tsp vanilla extract 
  • Cinnamon, to taste 
  • Pinch of salt 
  • 1 to 1½ tbsp allulose, to taste 
  • Optional: 1 tbsp raw cacao powder

Wild Blueberry Fiber Topping

  • ½ cup frozen wild blueberries 
  • ½ tsp chia seeds 
  • ½ tsp ground flaxseed 
  • ½ scoop FiberMend by Thorne 
  • 1–2 tbsp water, only if needed 
  • Optional: cinnamon 
  • Optional: splash of vanilla 
  • Optional: sprinkle of raw cacao 
  • Optional: unsweetened shredded coconut for topping

Instructions

Make the Wild Blueberry Fiber Topping

  1. Add the frozen wild blueberries to a small saucepan. 
  2. Cook over low-medium heat for 4–7 minutes, stirring occasionally, until the berries soften and release their juices. 
  3. Add 1–2 tbsp water only if needed. 
  4. Once the berries become warm and jammy, remove the pan from heat. 
  5. Stir in the chia seeds, ground flaxseed, and ½ scoop FiberMend. 
  6. Let the mixture sit for about 5 minutes so it thickens. 

Make the Egg-White Cream

  1. Add the egg whites, water, vanilla, cinnamon, salt, and allulose to a cold pan. 
  2. If using cacao, mix the cacao powder with 1–2 tbsp water first to make a smooth paste. Then whisk it into the egg-white mixture. 
  3. Cook over low heat, stirring constantly with a whisk or silicone spatula. 
  4. Cook for about 5–8 minutes, or until the mixture becomes thicker, glossy, and creamy. 
  5. Remove from heat before it gets too firm. Egg whites continue to cook from residual heat. 
  6. If the cream gets too thick, add 1–2 tbsp water and stir until smooth again. 

Assemble

  1. Place one Sweet Potato Protein Pancake on a plate. 
  2. Spoon the chocolate or vanilla egg-white cream over the pancake. 
  3. Add the warm wild blueberry fiber topping. 
  4. Sprinkle with cinnamon, cacao, or unsweetened shredded coconut if desired.

Recipe Notes

  • Cook the egg-white cream low and slow. High heat can turn it into scrambled egg whites. 
  • If using cacao, mix it with water first to avoid clumps. 
  • Cacao is optional. You can add it to the cream, stir a small amount into the blueberries, or sprinkle it on top. 
  • If your gut is sensitive to fiber, start with ¼ scoop FiberMend instead of ½ scoop. 
  • The blueberry topping thickens as it sits.
