For the creamy layer, I’ve used a plant-based cashew and coconut sour cream. Alternatives:

  • Almond sour cream
  • Cashew yogurt
  • Cottage cheese (if dairy or small amounts of it aren’t hindering your well-being).

Topping Alternatives:

  • Chopped leafy greens, raw or cooked vegetables
  • Fresh herbs

Instructions

  • Toast the buckwheat sourdough slices until crispy.
  • Spread a thin layer of plant-based cashew sour cream on each slice. Save the remaining sour cream to mix into the scramble.
  • In a pan, scramble the chicken, egg, and egg whites together with black pepper and a small pinch of Celtic or Himalayan salt.
  • Add any other spices you enjoy, such as garlic powder, paprika, onion powder, chili flakes, or Italian herbs.
  • Mix the remaining cashew sour cream into the scramble for extra creaminess.
  • Add the chicken and egg scramble on top of the toasted bread.
  • Top one slice with microgreens and the other with alfalfa sprouts. Use enough to add color, crunch, fiber, and freshness.
  • Sprinkle 1/2 tablespoon nutritional yeast on top of everything.
  • Finish with a small drizzle of hot sauce for extra flavor, if desired.
